Every once in a while, I get hungry for roti. It is an Indian tortilla that gets stuffed with a variety of meats/potatoes/vegetables. The last time and only time I have had Roti was on our honeymoon in Tobago. I had a hard time finding food that I would eat when we were off the resort. I hit the jackpot when I discovered potato filled roti!!!! Yummy and "safe." I found a recipe for roti that was pretty easy to make. Not sure how close it is to the real roti and method of preparation, but it was definitely yum-o and reminded me of our honeymoon all those years ago.

I am so thankful for my husband, the man that God has gifted me with to endure life's struggles and enjoy life's blessings. I am thankful for the way he provides for our family, the way he plays with the kids and coaches their sports teams, the way he makes me laugh and for him being the logical, rational one to keep me on track (the nerd when I tend to be the free spirit, although I would never describe myself that way--thanks Dave Ramsey). I am thankful for his faithfulness and devotion as a husband and father. Thank you, Matt, for enduring life's journey with me. I know I don't always make it easy. I pray that we continue to grow as individuals in Christ and together in Christ. We have been married for 10 years, together for 17 and I look forward to the years ahead and what God has in store for us.
